Daging Masak Hitam











1 kilo daging lembu muda
1 1/2 biji kelapa (kerisik berminyak)
30 biji bawang merah - goreng sedikit dlm minyak sebelum dikisar -kisar halus
8 biji bawang putih - goreng sedikit dlm minyak sebelum dikisar -kisar halus
2 inci halia - kisar halus
10 biji cili kering - digoreng supaya wangi - kisar halus
2 sudu besar jintan manis - digoreng kering dan tumbuk halus
1 sudu besar jintan putih - digoreng kering dan tumbuk halus
1 sudu besar lada hitam - digoreng kering dan tumbuk halus
2 batang kulit kayu manis - pecah2 - digoreng kering dan tumbuk halus
3 kuntum bunga lawang - buang biji - digoreng kering dan tumbuk halus
5 biji buah pelaga - digoreng kering dan tumbuk halus
1/2 sudu besar bunga cengkeh - digoreng kering dan tumbuk halus
2 cawan minyak masak (sebaik2nya pakai cukup2 utk tumis)
Asam jawa sedikit
Serbuk kunyit 1 sudu kecil level

*Campur semua bahan yang dikisar bersama daging yang telah dipotong dadu. Masuk 2 sudu gula merah, 1 cawan kicap pekat dan serbuk kunyit.
Panaskan minyak masak, dan tumis * campuran yang telah diperap tadi dan masukkan daun pandan untuk wangi.
Kacau rata biar sampai daging empuk baru masuk garam, air asam dan kerisik. Biar mendidih dan naik minyak semula baru angkat.
ps: kalau kering n daging stil tak empuk tambah air sedikit dan biar daging empuk.

Chicken Pot Pie

1.1-kg (2.5lb)oven ready chicken, jointed
1.25ml(1/4 level tsp)dried marjoram
bay leaf
400ml (3/4 pint)water
salt and pepper
2 large carrots, peeled and sliced
1 large stick celery, washed and sliced
175g (6oz)button onions, skinned
225g (8oz) broad beans
45ml (3 level tbsp) plain flour
60ml (4tbsp)double cream
150ml (1/4pint)milk
100g (4oz)mushrooms, halved
25g (1oz)butter
shortcrust pastry made with 175 g (6 oz) flour *
1 egg yolk, beaten with 5ml (1 tsp)water


1. put the chicken in a large saucepan with the marjoram, bay leaf, water, 15ml (1 level tbsp)salt and 1.25ml (1/4 level tsp) pepper. Bring to the boil, reduce the heat, cover and simmer for 35 minutes or until the chicken is tender. Strain and reserve 150ml (1/4 pint) chicken stock.
2. Cool the chicken. Remove the bones and skin and discarded them. Cut meat into 2.5-cm (1-in)pieces.
3. Put the reserved stock in a saucepan with the carrots, celery, onions and broad beans. Cover and simmer for 10 minutes or until the vegetables are almost tender. Remove them with a slotted spoon, reserving the stock for the sauce.
4. Blend the flour with the cream until smooth. Gradually stir it into the stock in the pan and add the milk. Cook over a gentle heat until the sauce has thickened, stirring all the time.
5. Saute the mushrooms in the butter for 5 minutes; drain of any liquid. Stir the mushrooms into the sauce with the cooked chicken and vegetables, 2.5 ml (1/2 level tsp)salt and pepper. Spoon into a 1.1-liter(2-pint)capacity pie dish).
6. Roll out the pastry to about 2.5 cm (1in) larger then the pie dish all round.
7. Place the pastry loosely over the filling and trim the edges, leaving a 2.5-cm(1 in)rim.Fold the rim under and pinch to make a stand-up edge. Use the trimming to make leaves and decorate the pie.
8. Brush the pastry with the egg yolk mixture and bake at 180 Celsius mark 4 for about 45 minutes, or until the pastry is golden brown and the filing is completely heated through.

Cheese cake for mama n abah's 39th wedding anniversary




25th december was my parents wedding anniversary.
hehe makin lama makin senang nak buat cheese kek ini...tak sempat nak take the picture cos semua dah slice into small peaces for my brothers and sister so they could eat this evening after work. some dah ngap. kid just love cheese! hehe :)

aisyah enjoying her strawberry cupcake. dah lama nk dropby kat wondermilk cafe..ohh x sangka dekat dgn rumah. akhirnya sempat pun singgah. faeza cuma bought a box of 4 maxi cupcakes just to try; strawberry, chocochips+vanilla, chocolates and mint urmm nyummyyy..

Hidangan Raya

Akhirnya fae berjaya buat Rendang TOK n Fruitcake sendiri without any help from my mom :)
ok here's the recipe...enjoy..

RENDANG TOK





Bahan
1 kg daging [potong sebesar 3 inci]
1/2 cawan kerisik
3 s/b gula merah
3 keping asam keping
3-4 helai daun kunyit [potong halus-halus]
garam

Bahan mesin
2 s/b ketumbar
1 s/b jintan manis
1 s/b jintan putih
1 s/b lada hitam
3 kuntum bunga lawang
5 kuntum bunga cengkih
25 biji cili kering
20 biji bawang merah
5 cm halia
5 batang serai
3 cm lengkuas

ok recipe ni fae ambil dari hanieliza's blog. tapi fae make some changes pada cara2 penyediaannya.

CARA-CARA

1. mula2 basuhkan ketumbar, jintan manis, jintan putih, lada hitam, bunga lawang dan bunga cengkih tersebut dan goreng tanpa minyak.(tujuan ini untuk mewangikan lagi rempah tersebut).goreng sampai ketumbar jadi keperang2an.

2. mesin kesemua rempah (1) sehingga halus. (biasanya kalau dah goreng lebih mudah untuk dimesin).

3. ok!untuk cili kering pulak, buang tangkai dan basuh bersih2 (ingat! jangan potong2 lagi cili kering tersebut). perah dan goreng cili tersebut dalam kuali. goreng sampai jadi hitam! tapi bukan sampai hangus:)

4. potong cili kering (3) tersebut kecil2 dan mesin sampai halus.

5. Seterusnya mesinkan juga bawang merah, halia, serai dan lengkuas yang telah dipotong halus(masukkan sedikit air untuk mudah memesin).

6. Masukkan semua bahan kecuali daun kunyit, kerisik dan asam keping dalam kuali.

7. Masakkan dengan api perlahan sehingga pekat dan naik minyak.

8. Bila telah pekat masukkan daun kunyit, asam keping dan kerisik. Kacau rata.

9. Masakkan lagi sehingga naik minyak dan cukup pekat. [sebaiknya keringkan sikit rendang ni]

10. Hidangkan.

Actually rendang fae ni tak betul2 jadi rendang tok..rendang tok sepatutnya hitam. but the taste is delicious!cuba la. i received good feedbacks from my family and relatives. ^^

FRUIT CAKE



Bahan
9 telur ayam
7 1/2 oz castor sugar/gula halus/gula kasar(225 gm)
14 oz mentega
14 oz tepong gandum (400 gm)
9 oz badam kisar yang kasar atau pun hiris-hiris (250 gm)
13 oz dried currants/raisins (375 gm)
27 biji cherry merah n hijau dihiris
4 1/2 tbsp kulit limau
sedikit baking powder
1 tsp essence vanilla


tsp=sudu kecil
tbsp=sudu besar

CARA-CARA:

1. Make sure telur ayam berada pada suhu bilik dan telah dibasuh, mentega dah lembut, tepung dah diayak, ceri dah dihiris dan semua dah ditimbang.

2. Mula2 gaulkan semua tepong gandum, badam, kismis currants, cherry, kulit limau dan baking powder rata-rata. You can also use mix fruits too that are sold in boxes if you like. For the fruits you don't have to be too accurate ok just agak2.

3. Next, asingkan egg yolks and egg whites carefuly.

4. In a large bowl, beat the egg whites and beat in sugar a little at a time until fluffy. Then beat in egg yolks a little at a time until thick and light.

5. In another bowl cream the butter and combine mixture (4) a little at a time. And add in 1 tsp essence vanilla.

6. Lastly, add the fruit mixtures (2) ke dalam mixture butter tersebut. Stir together nicely in one direction.

Preheat oven to 160 degrees C. Grease pan and line with parchment paper. filling all the mixtures and spreading batter evenly. Bake for 90 minutes, or until a toothpick inserted into the center of cake comes out clean. Allow to stand until cool before serves.
